A rustic treasure from the woods of Chianti

In the shaded hills and forested paths that surround our estate, chestnut trees grow wild and proud. For centuries, these trees have offered nourishment, warmth, and flavor to the people of Tuscany. Today, we continue that tradition harvesting, drying, and transforming chestnuts with the same care and reverence as our ancestors.

Our chestnuts are hand-picked during the crisp autumn months and dried slowly over fire in traditional stone drying houses. The result is a rich, earthy product with an unmistakable flavor: sweet, nutty, and deeply satisfying.

A seasonal gift, crafted with care

We produce a small selection of chestnut-based specialties: flour for rustic baking, whole roasted chestnuts, and seasonal desserts that honor the ingredient’s humble origins. Each product reflects the land where it was born — from ancient woodlands to your table.

Whether enjoyed freshly roasted by the fireplace, ground into soft flour for cakes and bread, or paired with honey and cheese, our chestnuts offer a taste of authenticity and nostalgia.

Chestnuts Production

From forest floor to farmhouse kitchen

Every year, in October and November, our team walks the hills to gather ripe chestnuts from beneath centuries-old trees. The harvest is manual and selective, respecting the rhythms of the forest. Once collected, the chestnuts are cleaned and dried slowly over gentle fire for up to 40 days preserving their full aroma and texture. It’s a ritual of patience and respect, repeated each season.

Ancient, nourishing, unmistakably Tuscan

Chestnut flour has been used in Tuscany for generations to make hearty polenta, pancakes (necci), cakes, and pasta. Rich in nutrients and naturally gluten-free, it’s a true superfood hidden in tradition. Our roasted chestnuts, meanwhile, are perfect for sharing and celebrating the essence of autumn.

All of our chestnut products are available seasonally and in limited quantity, depending on the forest’s generosity. Guests staying in autumn are welcome to join us for guided foraging walks and traditional roasting experiences by the fire.
